Why: I've used the quick roll recipe from the Baker Upstairs a few times and tend to like the results well enough to keep making them. More importantly, I could get... I guess I can't really call them Partner anymore, can I? Hm. I could get Tree to eat them, which means they were plain, but edible. That's usually Tree's standard.

Okay, so this process did not go smoothly, and I'm pretty sure that's on me, but I'm not necessarily sure what I could've done to make this go better. The flour mixture and the butter never really came together into a course crumb stage? Maybe it would've if it were warmer in my kitchen or if I tried for longer??? But it didn't and I decided to add the fluids anyway. It doesn't directly tell you how to divide the eggs, so I did two with the milk and mixed the third in a separate dish for the brushing later. It didn't come together as well as I had hoped, so I ended up adding about half of the the third egg to the mix. That worked out a lot better, but... there were kitchen malfunctions. I've got this really terrible tile-grout thing going on for my counters and it is one of the things that makes me dislike this apartment. I have a silicone mat that I got when I realized I wasn't willing to knead out bread on the counter, in hopes that it'd help me override some of my inclinations to just... not. It didn't, not really. I made bread at the house a few times during the year I lived in my apartment, but Tree and Fae (used to be Metamour) lived at the house, but I haven't really done much here.

The problem is, I ordered it online and it's MASSIVE. So I folded it in half, which it responded to by pitching a not-insignificant amount of my mix onto the floor. That's on me. I should've considered that the tilt would be too much, and I should've had it pushed back further on the counter, except that counter space is kind of tight here, so there are things on the back of that counter. I'll need to figure out a different solution for next time. Eventually I got it to the point where I could roll it out and cut it. I ended up making 8ish squares because of said pitching-onto-floor. I egged and sugared the tops and cooked them for 12 minutes, and... they were raw in the middle and pale on the top. I think they were about the right thickness, but 8 is significantly different than 12. I probably overestimated how much of the mix ended up on the floor because I didn't clean it until they were in the oven. I cut them all in half and put them back in for about 5 minutes. The middle still gives when they're pressed, which makes me suspicious of them, but... They're done enough for my purposes?

I didn't make whipped cream for them because, frankly, I hate doing that much stirring and I don't trust my ability to resist the urge to just eat the whipped cream from the bowl if no one else is around. I like sweet and cold and it fits the bill. I do have apple butter and blackberry jam, though!
